No Bake Cookie Dough Tarts for Two
These 8 ingredient wonders come together in an egg free, dairy free, vegan treat quickly! Chocolate and cookie dough are the best, who needs the oven?
- 4 chocolate mint wafer cookies
- 1 tbsp vegan butter Such as Smart balance
- 1/4 cup all purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 2 tablespoons vegan butter such a Smart balance
- 2 tablespoons sugar
- 2 tablespoons almond butter
- 2 tablespoons allergy friendly chocolate chips such as Enjoy Life
Chocolate cookie crust
Place metal cupcake liners in cupcake tray (you use the cupcake tray for structural support as you build.) If you would like, you can divide these into four cupcake liners for a treat that's less decadent.
Pulse cookies into a coarse dust. Add the vegan butter and pulse, just until the mixture looks like coarse sand.
Divide mixture evenly between cupcake liners and press gently in (don't pack in too hard !)
Microwave flour on microwave-safe plate for 30 seconds to kill bacteria.
Combine all ingredients in food processor except chocolate chips. Blend to combine until mixture is uniform.
Fold in chocolate chips. Divide mixture between both cupcake liners and smooth out.
Remove from cupcake pan, chill in refrigerator at least an hour.
Carefully unpeel liner and enjoy!

I may have wrote the shallot chicken recipe for my husband, but the dessert is me all over! At the end of a long day chasing my increasingly active Toddling Two Footed around, often I like a treat. Cookie dough used to be a favorite flavor I bought: everything from ice cream to candy to take to the movies. I’ve renewed the love affair with these tarts that only take a few minutes to put together.
Beware: cookie dough tarts are rich. You may want to split these in four unless you’ve had a really rough day.
I’ll spare you the details of the kind of days when I have a whole one of these decadent treats. Ok, just a hint: our son Toddling Two Footed is fascinated with the toilet and he’s very fast! I don’t care how often we keep the lid shut or close the door, there’s that split second when he finds a way to drop things in there… I need to buy stock in bleach.
