- Ingredients: 1/4 lb. deli sliced Pastrami and Corned beef
- good quality sub rolls
- 1 tbsp. mayo
- 1 tsp brown spicy deli style mustard
- 1 tbsp. Italian dressing
- 2 slices sliced provolone or 2 tbsp. Daiya mozzarella style cheeze shreds
- Vegetables of choice: shredded lettuce diced tomatoes, sliced olives, thinly sliced onion
Method: Spread mayo and mustard in a thin layer on both sides of roll. Top with meat and cheese. Close sub,wrap in damp paper towel and microwave until cheese melts. Remove from microwave, drizzle Italian dressing. Add vegetables of choice.
Variations: Turkey with sweet cranberry spread. Delicious!
Olive Tapenade and balsamic reduction instead of Italian dressing.

Sometimes do you want a cooking break? Something fast and easy? Enter the noble sandwich. Sadly abused by weak sandwich bread and a lack of quality meat and condiments, let us elevate it once again to a meal instead of an afterthought.
When I was pregnant, I desperately missed subs. Cold deli meat is not allowed! I went so far as to microwave deli meat to make sandwiches. Fried bologna sandwiches were consumed frequently.
My husband took me to a hot sub place – marvelous! Once again, I could dine on subs. Our baby might be 50 percent sub. In order to preserve our budget I improvised these imitation versions.
