Ranch Potato Pancakes

Delicious easy side dish recipe with leftover mashed potatoes. Why make plain potato pancakes when you can have ranch potato pancakes?

Ingredients

  • 1 cup mashed potatoes
  • 1/4 cup all purpose flour Gluten free if needed
  • 1 beaten egg
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp dried dill
  • 1 tbsp dried parsley
  • 1 tsp salt
  • 2 tbsp cooking oil of choice

Instructions

  1. Warm oil in saute pan on medium high heat

  2. Combine all ingredients mixing until mixture is uniform

  3. Form potato mixture into patties.

  4. Carefully place patties in pan, brown on both sides. Serve.
