Ranch Potato Pancakes
Delicious easy side dish recipe with leftover mashed potatoes. Why make plain potato pancakes when you can have ranch potato pancakes?
- 1 cup mashed potatoes
- 1/4 cup all purpose flour Gluten free if needed
- 1 beaten egg
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tbsp dried dill
- 1 tbsp dried parsley
- 1 tsp salt
- 2 tbsp cooking oil of choice
Warm oil in saute pan on medium high heat
Combine all ingredients mixing until mixture is uniform
Form potato mixture into patties.
Carefully place patties in pan, brown on both sides. Serve.

Crawling2handed has a cold and four, yes, four teeth trying to add themselves to the six already destroying any mushrooms or paper towels that comes near. Productivity has come to a halt. Laundry has now become decoration on our couch. I sincerely hope it gets put away before I have to start dusting it as a permanent fixture. Thanks to my microwave mashed potatoes, we’re still eating well.
These potato pancakes take about 5 minutes to throw together.
If you can crack open an egg, you can have potato pancakes. The addition of ranch spices? A delicious bonus. I still just really like ranch flavors and so does Crawling2handed. Before this cold we sat down with two pork chops and four of these mashed potato pancakes and ate until we were stuffed. It took a considerable amount of time. Remember that scene in Indiana Jones where Indy’s girlfriend drinks that huge Mongolian guy under the table? Crawling2handed looked about like him when he was finished. Full, eyes barely open, huge full tummy. He must have been storing up for when the next teething episode happened. He has put on a pound and a half in two months! I’m one proud mama.
There are a million ways to make potato pancakes.
