Spiced Pear Compote
- 3 Fresh Bartlett pears, diced
- 1 tbsp cinnamon
- 1/2 Tsp nutmeg
- Water, enough to cover pears
Stove Top: Simmer covered until pears are tender.
Instant Pot: Cook on Manual for 5 minutes (sealing mode.) Allow to release naturally or you may quick release.
Crock Pot: Cook on low 2 hours or high 1 hour or until pears are tender.
Mention Fall and I will get giddy.

The best season in Carolina is fall. Apple cider festivals pop up on every mountain. People come for miles to see fresh apples get pressed until delicious clear cider spills out of the old wooden trough. The leaves are already changing. Soon the mountains will be bursting with yellows, oranges, reds, and golds. At night the smell of wood burning fireplaces will mingle with the fresh pines in the air. Stars will be at their clearest for gazing, marshmallows will be at their readiest for toasting.

I started making this for my son Crawling 2 handed, it’s one of his favorite snacks and he loves it stirred in oatmeal. The smell of the cinnamon wafting around the house has me smiling all day. I quickly began stealing some of the pears, I don’t know who enjoys them more. These days he’s crawling so fast sometimes I think I gave birth to a diaper with feet! Already he is changing and growing so fast. The days to come will be sweet, I’ll be buying pears in bulk and enjoying every moment.
