S'More Nachos with Vegan Caramel Sauce




  • 1 cup Graham crackers broken into squares
  • 1/2 cup Mini Marshmallows
  • 1/4 cup Mini chocolate chips

Vegan Caramel Sauce:

  • 1 Can full fat coconut milk
  • 1/2 Cup packed brown sugar
  • 4 Tbsp. butter/ spread of choice I use Smart Balance


  • Toasted coconut, sliced strawberries, blueberries



S'More Nachos:

  1. Set oven to broil. Lay out graham cracker squares and top with chocolate chips and marshmallows. Broil approximately 10 seconds, or just until the marshmallows toast. Watch the oven the entire time! This can burn very, very quickly.

Vegan Caramel Sauce:

  1. Combine coconut milk and brown sugar in pot. (If your coconut milk has separated, process in a blender for a few seconds.)
  2. Cook on a low simmer approximately 45 minutes, stirring carefully. When mixture coats the back of a spoon, remove from heat and add butter/ spread. Stir to combine. Let cool. (Mixture will continue to thicken.)

It’s summer time.

We’re very close to the Fourth of July and I can’t help but think of our littlest ones with food sensitivities. What’s more of a bummer than not getting to eat fun dessert? Make these and lay out all the toppings for them to get creative. Soon all the kids without sensitivities will be clamoring to make their S’more nachos the most elaborate, sugar laden, crime-against-the-insulin-secreting-pancreas treats. This would be so much fun for a late night sleepover snack and once the broiling process is done, you can let them have at it!

S’more Nachos with vegan caramel sauce would be welcome at any potluck!

For the Fourth, may I recommend topping with strawberries and blueberries for a red, white, and blue theme?

We should probably talk about this caramel sauce. It’s pretty amazing. It’s Vegan. It’s ‘buttery.’ It has been going in my coffee. This is a real game changer for those of us who can’t have dairy. Like I’ve said before, when I’m in my own kitchen I don’t feel deprived at all. Store it in the fridge- it will harden and possibly solidify- and microwave it for 10 seconds to warm it up. As always, exercise caution with hot sugar sauce. You can thank me later.
