Chinese pot sticker bowl
- Ingredients: 1 pound ground chicken pork, better than beef crumbles or diced shrimp
- 1/2 cup minced carrots
- 1/4 cup minced onion
- 1/4 cup minced water chestnuts
- 1/4 scallions- cut into rounds
- 1 teaspoon minced garlic or 1/2 dried garlic powder
- 1 Tbsp grated fresh ginger or 1 tsp dried ginger
- 1 tbsp. soy sauce sweet rice wine, sesame oil
- 2 cups cooked rice
- 2 tbsp. canola or peanut oil
- Sauce: 2 tbsp. soy sauce
- 1 tbsp. sweet rice wine
- 1 tsp. sugar
- 1/2 tsp sesame oil
- Garnish: diced scallions and toasted sesame seeds
Method: Saute chicken, onion, and carrots in oil until chicken is no longer pink. Add ginger and garlic, cooking until fragrant. Add water chestnuts, and scallions, cook for 5 minutes. Add soy sauce, sweet rice wine, and sesame oil.
Whisk all ingredients listed for dumpling sauce. Garnish with scallions and sesame seeds.
Serve with rice as base.
Slow cooker method: Grease or line slow cooker. Combine All ingredients except scallions, rice and those listed for pot sticker sauce. Cook on high 4-6 hours or low 6-8. Stir every two hours to ensure meat is spread throughout slow cooker dish. Whisk dumpling sauce together right before serving.
Instant Pot Method: saute filling in 2 tbsp. Oil of choice with 2 tbsp. water, set instant pot on meat mode. Whisk dumpling sauce together just before serving.
Variations: Serve with brown rice or cauliflower rice.
If you enjoy spice, add 1 tbsp. chile oil to your dumpling sauce.
Sweeten dumpling sauce with whatever sweetener you choose- honey, brown sugar, maple syrup.
You can also substitute coconut Aminos for soy sauce.
If you want to make this very easy, buy a bag of shredded coleslaw mix with carrots and add instead of chopping your own vegetables.
If you are gluten free, ensure the soy sauce you are using contains no gluten.
Vegan: Add your favorite veggie ingredients for a vegetable pot sticker bowl. You can also add diced firm tofu or Seitan- my favorite way to eat tofu is in Asian inspired meals. Garnishing this with roasted peanuts would also be delicious.
If I can choose how to die, I hope it will be death by eating pot stickers.
Egg roll bowls are making the rounds on the recipe blogs, but who wants egg rolls when you can have pot sticker filling? I thought this idea up and could not wait to make it- especially with pot sticker sauce (which I could drink.)
I made this on a very stressful day. I had administered children’s Tylenol to our son using my ‘foolproof’ method. As it turns out, it was not fool proof. I was the fool! Two baby-wipe-downs later, we were still sticky. It is very impressive how much ground 2 Ml of medication can cover.
I had mopped the floor, then proceeded to spill oil on it. I did this when I was putting it in the pantry, so oil also lubricated many of my pantry ingredients. When I went to pull out the mop, I pulled out the vacuum cleaner by mistake. Fussy, sore baby from shots, tired, tired mommy.
There is some good news: My baby is already smarter than me, and the Tylenol was grape flavored. Given the choice between smelling like cherry or grape, I choose grape. I considered leaving it on as perfume and calling it “Eau de mommymess.” Think it would sell?
When I had the idea for this dinner I stopped everything and made it. One handed with a fussy baby sore from shots. It was delicious and really cheered me- a victory of a stressful day! If you love pot stickers as much as I do, you’ll love this.
